Baking and Food Processing
In baking and food processing environments, motor-driven equipment shapes, mixes, heats, slices, and packages product throughout the production cycle. Speed control affects batch consistency, timing, and finished product quality.
American Control Electronics supplies motor control systems used in commercial bakery and food production equipment. Our AC, DC, brushless DC, stepper, and servo controls are integrated into machinery that manages motion across each step of the processing line. All products are designed and manufactured at our UL508A-certified facility in South Beloit, IL and ISO9001:2015 certified facility in Chanhassen, MN.

ACE Motor Controls in the Bakery: Application Spotlight
From raw dough to finished package, every stage of a commercial bakery line depends on precisely controlled motor-driven equipment. Below are eight common machine types used in baking and food production and how ACE motor controls are applied within each.

Commercial Dough Mixers
Spiral and planetary mixers must deliver high torque at low speeds to work dense, high-hydration doughs without stalling or damaging the motor. Ingredient loading, mixing speed, and ramp-up profiles all need to vary between recipes without requiring manual adjustment on the production floor.
ACE DC motor controls provide the high starting torque and smooth low-speed performance that dough mixing demands. Built-in torque limiting protects the drive and mixer head from overload during heavy batches, while programmable acceleration ramps prevent shock loading when the motor starts under full dough load. ACE controls can also accept external speed reference signals, making it straightforward to tie mixer speed into a recipe management or PLC system.

Proofing Conveyor Systems
Proofing conveyors carry portioned dough pieces through a temperature and humidity controlled environment for a precise duration. The belt speed determines how long each piece spends in the proofer, too fast or too slow and the dough arrives at the oven under or overproofed.
ACE AC variable frequency drives (VFDs) provide stable, highly repeatable belt speed across the full operating range, including the very slow speeds typical of long proofing conveyors. Speed adjustments are smooth and continuous, allowing operators to dial in proof time without stopping the line. For multi-zone proofer configurations, ACE controls can be ganged to maintain consistent belt tension and speed ratio across each conveyor segment.

Tunnel Oven Conveyor Drives
In a commercial tunnel oven, the speed of the conveyor belt is one of the primary variables that determines bake time. Consistent, repeatable belt speed is essential, a variation of just a few percent can mean the difference between a properly baked product and one that is over- or under-done.
ACE AC VFD controls maintain tight speed regulation on oven conveyor drives even as load conditions change throughout the bake cycle. The controls operate reliably in the elevated ambient temperatures common around industrial ovens. For bakeries running multiple products, operators can store and recall speed presets for each recipe, eliminating manual guesswork during changeovers. ACE can also provide custom firmware configurations that lock speed settings to prevent unintended adjustments on the production floor.

Dough Sheeters & Laminators
Sheeters and laminators pass dough between a series of rollers to produce a uniform sheet of controlled thickness. When roller speeds are mismatched, even slightly, the dough tears, stretches unevenly, or folds, producing an out-of-spec product. Laminating lines for croissants, puff pastry, and similar products add the additional challenge of maintaining precise tension through multiple butter and fold stages.
ACE brushless DC and DC motor controls provide the tight speed regulation and strong holding torque required to keep each roller pair in precise ratio. Tachometer feedback closes the speed loop so the control compensates in real time for load variations. For multi-roller machines, ACE custom control designs can coordinate speed ratios across all drive points from a single operator reference, simplifying both setup and recipe changeovers.

Depositors & Volumetric Extruders
Rotary depositors, piston fillers, and auger extruders determine product weight and shape by controlling the volume of dough or batter dispensed per cycle. Any variation in motor speed translates directly to inconsistent deposit weight, which affects bake time, finished product appearance, and regulatory compliance in weighed-and-priced food products.
ACE DC motor controls with closed-loop tachometer feedback maintain consistent pump or auger speed regardless of changes in product viscosity or back-pressure within the hopper. Speed-to-deposit-volume calibration is straightforward: once set, the control holds the programmed speed to within a tight tolerance across the full production run. For OEM machine builders, ACE can integrate the depositor drive into a broader machine control scheme using analog or digital I/O, enabling automatic speed adjustment based on line rate or upstream demand signals.

Pasta & Deli Slicers
Commercial slicers and portion cutters require coordinated control of two distinct motions: the cutting blade speed and the product feed rate. When these two axes are not properly synchronized, products are cut at inconsistent thicknesses, blades drag rather than cut cleanly, and product integrity suffers. Changeovers between products of different sizes or densities require fast, reliable speed adjustments on both axes.
ACE stepper and servo motor controls are well-suited for slicer feed systems where precise product indexing is required. Programmable positioning allows the feed mechanism to advance product a defined distance per cut cycle, producing consistent slice thickness regardless of operator variation. For slicer blade drives, ACE DC or brushless DC controls provide adjustable blade speed to match the requirements of different products, from soft sandwich loaves to dense whole-grain breads. Multiple speed presets can be recalled instantly during product changeover.

Pan Stackers & Destacking Equipment
Pan stackers and destacking systems move baking pans vertically between conveyors and storage positions. The elevator or lift mechanism must stop accurately at each pan height within the stack, handle acceleration and deceleration gently to avoid damaging pans or product, and cycle quickly enough to keep pace with the line speed upstream and downstream.
ACE servo and stepper motor controls provide the precise positioning accuracy that pan handling equipment requires. Programmable stop positions can be set for each level in the stack, and soft acceleration and deceleration ramps prevent mechanical shock at the end of each move. Position feedback from an encoder or sensor allows the control to confirm that each pan level was reached before releasing the conveyor interlock. For OEM machine builders, ACE can develop custom firmware that ties stacker positioning logic directly into the machine's I/O sequence, reducing the need for an external PLC in simpler applications.

Packaging & Wrapping Lines
Packaging and wrapping lines coordinate multiple driven axes, product infeed conveyors, film unwind and pull systems, sealing jaws, and outfeed conveyors, that must all operate in precise synchronization. A mismatch between the product infeed rate and the film pull speed produces wrinkled, misaligned, or unsealed packages. Line speeds vary based on product type, package size, and downstream case-packing demands.
ACE brushless DC and servo motor controls are used throughout packaging lines to provide accurate, repeatable speed control on each driven axis. For film pull and sealing systems, tight speed regulation ensures consistent film tension and seal quality across the full speed range. For infeed and outfeed conveyors, ACE controls accept analog speed reference signals that allow the packaging machine's master controller to adjust all axes simultaneously during speed changes. ACE's custom control capabilities allow multiple drive axes to be configured from a single OEM part number, simplifying the machine BOM and reducing integration time on the production floor.
